			<content:encoded><![CDATA[<p>Do you know Omar, the owner of Omar’s Rawtopia in Salt Lake City?  Oh, what a delight and PURE joy it is when I have time to stop at his amazing restaurant in the big city.  He uses ONLY 100% organic ingredients.  Not only that, his food is nutrient rich, LIVE with enzymes and PACKED with flavor.</p>
<p>This time of year, my body is clamoring for dark leafy greens a other herbs for their powerful cleansing properties.  Here is a recipe that has kale (dark leafy), parsley (cleansing), berries (antioxidants), chia seed (protein and omegas), spirulina,  mesquite powdered, maca root (all superfoods) and apples/oranges (good vitamins and naturally sweet).  The result is a SUPERFOOD, SUPER PACKED, and NUTRIENT RICH MORNING SMOOTHIE!</p>
<p>The magical thing about a smoothie like this is that if you take the Green Smoothie Challenge (drink a green smoothie like this EVERY DAY for a week) you will be amazed at 2 significant changes which will take place within your body.</p>
<p>1.  The more greens you eat the more greens you crave.  You will drink this in the morning and at lunch you will be ready  for ….more greens!  Salad please!</p>
<p>2.  When you get greens into your diet in large amounts (especially dark leafy greens), your taste for sugar diminishes.  And when you get sticky sweet, sugary food things out of your diet, your body and brain will thank you!</p>
<p><span style="text-decoration: underline;">Omar&#8217;s Super Smoothie Recipe:</span></p>
<p>1 apple</p>
<p>1 orange</p>
<p>1 leaf of lacinato kale</p>
<p>1 sprig of flat-leafed parsley</p>
<p>1 handful frozen berries</p>
<p>1/8 cup chia seed (hydrated)</p>
<p>2 tsp. powdered greens</p>
<p>1 tsp. mesquite powder</p>
<p>1 tsp. maca root powder</p>
<p>Place everything into a blender adding pure water as needed.  Blend well.</p>
<p>*remember to choose organic ingredients.</p>

<p>9 eggs</p>
<p>1/4 cup mayonnaise</p>
<p>1  tsp. prepared mustard</p>
<p>1/2 tsp. turmeric</p>

<p>Peel the eggs, slice in half lengthwise, and remove the eg yolks to a small bowl.  Add the mayonnaise and seasonings.  Mix well and fill the egg white halves with the yolk mixture.  Sprinkle with paprika and serve.</p>

<p>3 cups quinoa, rinsed</p>
<p>6 cups water</p>
<p>1  1/2 cups cashews, roasted</p>

<p>1/2 bunch flat-leafed parsley, chopped</p>
<p>1/2 pack fresh mint, chopped (add more to taste if you like)</p>
<p>3/4 cup fresh lemon juice</p>
<p>2/3 cup olive oil, cold pressed</p>
<p>2 tsp. Real Salt</p>
<p>Cook the quinoa for about 15 minutes, then allow to cool.  When quinoa is cooled, combine with the lemon, olive oil and salt.  Mix in the remaining ingredients.  Done!  So simple and so fresh!  Just right for a good spring salad.</p>

			<content:encoded><![CDATA[<p>I am delighted to introduce you to our newest associate at Real Foods Market in St. George.  Reema has had 12+ years as a Holistic Nutritional Consultant and Certified Yoga Instructor in southern California and St. George, Utah.</p>
<p>Reema received her Doctor of Naturopathy and Ph.D. in  Holistic Nutrition from the American College of Holistic Nutition, she then conducted her post-doctoral research in Mexico and Belize that focused on natural approaches to create mind-body balance through connection to spirit.</p>
<p>Her main focus has been to improve client eating habits; uncover pootential emotional relationships with food; identify cravings, sensitivities and environmental or genetic food allergies; and faciliitate impproved wellness through customized, whole food nutrition and supplementation in a suportive, nurturinng environment that empoweers the client.</p>
<p>Reema is a professional member of the American Association of Nutritional Consultants, and the American Naturopathic Medical Association.  Her passions include writing, music, yoga, Reiki and animal wellness.  She is a Reiki Master/Teacher, and a published author on several articles on general health.   Reema loves to sing and spends her downtime in creative pursuits and exploring Southern Utah&#8217;s majesty with her chef husband and beloved dog.</p>

<div>I hope you are having a wonderful spring! I have just finished racing in the final two World Cups of the season, and just arrived back in Heerenveen where the final competition of the season, World Single Distance Championships, will be held. I have been on the road for 6 weeks right now, and at this point it’s the little things that count. Finding a Laundromat, a good German bakery, and seeing the sun for a few days (seeing the sun in Berlin this time of year is almost a small scale miracle) were some of the highlights of last week (ok, maybe not quite highlights, but you have no idea how sick I was of doing my laundry in the hotel sink)! I have had some really good training days too, and had so much fun skating yesterday that I didn’t want to get off the ice!</div>

<div>World Cup #5 in Heerenveen, Netherlands, was two weekends ago, and I raced the 5000m and mass start race. I was really hoping to have a really good 5000m race and qualify for the World Single Distance Championships in my favorite event, but unfortunately that was not too be. While I my skating technically felt really good leading up the race, I unfortunately got a bit sick and my body just didn’t quite have what I needed. The first 6 laps of the race went really well, I was right on schedule to do what I wanted and needed to do. But a 5000 is a 12 lap race, and my legs just didn’t have what I needed to keep holding the lap times for the last half of the race. It was disappointing, but at the same time I new that I had put every last drop of everything I had into the race, and that’s all I can ever really ask of myself. Some days that adds up to a great race, and some days it’s just not quite enough. The Mass Start race was a day later, I was feeling even worse than I had before the 5000 and was pretty much hoping to somehow just be able to finish the 15 lap race. But, somehow I pulled out a 4<sup>th</sup> place finish which moved me up to 3<sup>rd</sup> place overall in World Cup points!</div>

<div>The next weekend was the World Cup Final in Berlin. I had been feeling progressively better in training all week, and the day before my race felt great and had wonderful pre-race training on the ice, leaving me really excited to race the next day. I have never been in 3<sup>rd</sup> place overall in World cup points, and I was really hoping to be able to stay in the top three overall as well as maybe pull out a podium finish in the race. The mass start race is a new event this year, and vastly different from other Long Track events. Rather than racing against the clock, two skaters at a time, each in their own lane, in the mass start, everyone goes to the line together, the gun goes off, and it’s 15 laps of shear pandemonium! It can be an enormous amount of fun, and it can be incredibly frustrating. I felt so good during the race, but somehow I was always in the wrong place and the wrong moment. Time and again I just couldn’t get positioned in the pack where I wanted to, and with one lap the go I was near the end of the lead group of skaters. So I decided I would just try and go around everyone all at once! I set up the first turn wide and got past the about half the skaters, stayed wide down the backstretch, set up the last turn wide and started to pass people again. But then, just as I was about to go around the Dutch skater in 4th, she moved out and bumped into me. I almost fell, managed to stay up, but I had lost all of my speed and momentum. I got my feet back under me and tried to sprint like mad and get it back, but I wasn’t able to and finished 5<sup>th</sup> (although due to sprint points awarded earlier in the race I placed 6<sup>th</sup>). And unfortunately I moved down to 5<sup>th</sup> in overall World Cup points as well.</div>

<div>It’s amazing how much different 5<sup>th</sup> feels from 3<sup>rd</sup>. It’s only two places, yet it feels like it is worlds apart. And in a way it is. I didn’t want to watch the medal ceremony; I wanted to be up there, under the lights and the flags, with flowers and a medal. I felt like I had been so close, only to have it slip away. 5<sup>th</sup> is my highest overall World Cup ranking ever, and while I am happy with that, it left me wanting more. But I will keep that feeling with me as I go into the final competition of the season next weekend, and into training again for next season.</div>

<p><strong>Remove the stems from the Kale.  Place in a bowl and put salt on the leaves.  Massage the leaves so they will breakdown, keep going until you see green juice from the kale.  Add lemon juice and avocado and mix until well incorporated.  Pile on the remaining ingredients.  Enjoy!</strong></p>

<p>Wasatch County is raising the quality of school lunch&#8230;will this have an impact on ALL SCHOOLS in UTAH?  You bet!  Join the coalition of parents, local businesses (like Real Foods Market), and health professionals coming together to support and enhance our local school lunch program through education, fundraising and community action.  Register for the race.  Stand with RFM and other health-minded businesses as a sponsor.</p>
