Dear Redmond,

I have suffered from heartburn and reflex most of my adult life. In the early 2000’s my doctor put me on Nexium for them. It helped greatly. Then my husband lost his job and insurance, so I stopped taking the Nexium and went back to over the counter relief. Last year I began taking Raditidine (Zantac) with my evening meal to help with the overnight relief, and 2 to 8 antacids during the day. Then one day I went to BreadBeckers website to see if they had any new food prep videos. One by the name of ‘Healing Powers of Clay’ caught my eye and I watched it and printed off their booklet ‘We Eat Clay and Wear it Too’. I already used REAL salt mentioned in the beginning of the video, but learned new things about salt also. After hearing Darryl tell about all the things Clay could help with I was very interested and search the internet for more information. So after reading the Redmond Clay site and many others dealing with bentonite clay, I decided to give Redmond Clay a try. After 4 days I was no longer taking the Ranitidine or antacids. I took away 1 of my 4 pillows to prop me up at night. I don’t get awake in the middle of the night with reflux or heartburn anymore. Every morning I take 1 tsp. of clay mixed with about 8 oz. of juice, most of the time orange which I could not drink before. I am happy it works so well and it is NATURAL, not something made in a lab that could affect me in a harmful way down the road. I have been telling friends about Redmond Clay. Cleansing Carrot Juice

This is the time of year when you body will CRAVE cleansing foods!  Tap into that sensation and satisfy the NEEDS of your body.  It is perfectly normal and absolutely necessary to listen to your bodies many nutrient needs in the Spring.

This drink is fantastic!  Start your day with fresh vegetable juice.  We offer several fresh juices in our markets.  I really don’t have ONE favorite.  I rotate between the Green Juice blend, Carrot Juice blend and the Beet Juice blend.  This recipe is a little different then the one we make at the market, because I like to add the greens for an added cleansing effect.

Cleansing Carrot Juice

10 carrots

1 apple

1/2″ fresh ginger

1 handful carrot tops or parsley

 

Run all these items through your juicer.  Adjust the ratio of ingredients to your taste.  Enjoy the fresh juice!  *Be sure to select organic ingredients when you are juicing so you can help your body to detoxify.  Conventional produce will have pesticides and this will add to your body burden and you may not have the same cleansing outcome that you desire.

2 Week Spring Cleanse

If you are doing this to cleanse,  start the day with 8 oz of Sole. Click this link to understand the benefits of Sole water first thing in the morning.  Then hydrate your body with pure water.  When you feel yourself getting hungry, make this cleansing carrot juice or your favorite vegetable juice. I suggest you sip this so you don’t spike your blood sugar.  By noon you should be getting a little hungry.  Continue to listen to your body’s need for cleansing foods.  Reach for a big raw salad with lots of dark leafy greens.  As the day goes by, resist the urge to snack on hi-carb foods and sugars.  Then when dinner comes, dig in to another big raw salad.  You can serve it with cooked veggies and fish. After dinner, give yourself a warm cup of herbal tea in place of dessert.  You can also assist your body with detoxification by taking a lovely bath with Redmond Bath Salt Plus and a few drops of your favorite essential oil.

Continue to eat this way for two weeks and you WILL FEEL a transformation taking place within.  This cleansing diet will give your body a break from digestion and allow good internal “cleaning, sweeping and trash removal” to take place.  The anti-oxidants will scavenge the free radicals throughout your system.  You will have a diet rich in minerals, electrolytes, vitamins, enzymes and so on.  Your blood and organs will be FULLY NOURISHED!

Strawberry Salad on Arugula

The perfect salad for spring time because it uses the sweet fresh berries that are in season and also the delicious spring arugula greens.

Here is the Vinaigrette Recipe

1/8 cup olive oil, cold pressed

1/4 cup coconut oil, cold pressed

1/4 cup agave nectar

1/2 cup strawberries

1 lemon, juiced

1/4 cup Bragg’s Apple Cider Vinegar

1 T. chia seeds

1/2 tsp. Real Salt

Fresh ground pepper

Blend together and add water to thin the dressing (up to 1/4 cup).

Salad: (select organic ingredients)

Arugula

Fresh strawberries

Fresh blueberries

sweetened pecans or sliced almonds

pumpkin seeds

red onion, sliced thin

goat cheese

Toss the salad ingredients together.  Drizzle the dressing on top and toss some more.  Enjoy!  This salad is always a crowd pleaser – the sweet coco-nutty dressing is a perfect complement to the berries and the bitter greens.

Report on Natural Products Expo West

I just returned from a weekend at the Natural Products Expo West in Anaheim California.  It was a-MAZ-ing!  I was in Foodie Heaven for two reasons, first, all my RAW food guru’s were there promoting all their superfoods and their divine products.  Second, everyone was encouraging us to sample their goods so I was running around like a child on Halloween, eager to try all the FREE FOOD!  Now for those of you that know how pricy the Raw, superfoods can be, you may have an idea of how much FUN it was to try all these items.  Indulge?  Who Me?  Yessireeee! If you are wondering if you can over do it on RAW SUPERFOODS the answer is YES you can, and YES I did.

Who were the guru’s I was so excited to see?  Drummroll please….

And last but not least, there were the NEW DISCOVERIES!  Hunting for clean food at ANY expo including the Natural Products Expo is tough because you have to sort through all the REAL FOOD POSERS, these are the companies that speak the language and plaster the catch phrases on their packaging BUT when you look closely at the ingredients, you see that they are cleaver tricksters that are just trying to capture part of the market.  These are the people that use GMO ingredients, they add food coloring, they use poor quality oils and they add unnecessary additives, preservatives and so on.  It is not an easy job to sift through all the junk in order to find the clean food.  The work often creates a throbbing headache (as you know if you have been trying to select clean foods from a typical grocery store).  Whew! The good news is that we found several new companies that we LOVE and we will be bringing these new products into our store soon.  Here is a sneak peak…

6 Steps for a Healthier Summer You!

Patacones with warm Refried Beans

This appetizer is SO GOOD that it was the FIRST THING I made for my family when I returned from the humanitarian trip in Costa Rica.

The proper Spanish name for this dish is Patacones con Frijoles Molidos Refritos.

Let’s begin with the Refried Bean Dip:

2 cans black beans or 3 cups cooked beans

1 onion, grated

1 red bell pepper, finely grated

1/4 cup chopped cilantro

1 tsp. honey

1 tsp. Worcestershire sauce or Lizano (popular Costa Rican condiment)

Real Salt and pepper to taste

Saute onion and red pepper, in a skillet with 1 T. with butter and 2 T. olive oil.  Saute until tender.

Meanwhile, rinse and blend the beans (add up to 1/4 cup purified water as needed to blend).  Add cooked vegetables to the blender and remaining ingredients.  Pulse until a smooth paste is obtained.  Add more water as needed.

Serve warm with Patacones.  Garnish with cilantro.

Fried Patacones:

3 large green plantains (you need about one plantain per person)

2 T. Real Salt

2 cups cold water

1 cup Coconut oil

Coarse Real Salt to sprinkle before serving

Prepare the plantains by chopping off the tips and scoring the peel from end to end.  Remove the peal leaving the fruit intact.  Cut into 1″ round slices.

In a bowl, dissolve the salth in 2 cups of water.  Set aside.

Place the plantains into hot oil in a large skillet and fry the plantain without letting them cook completely.  Remove the plantain from the pan and place them in the salt water briefly.  Then pat them dry with a paper towel.  Put the plantain slices on a cutting board and press them firmly with a rolling pin in order to smash them a bit and make into patties.

Put them back into the hot oil and finish cooking until they look crisp and golden brown.  Sprinkle with coarse sea salt and serve with warm Refried Bean Dip.

Nutrition for Athletes

Are you an athlete that has begun SPRING TRAINING? Are you preparing meals for an athlete that is in spring training?  Well, either way, here is some great information that comes from Olympic Athlete, Maria Lamb.  She is currently in Europe on a 7-week trip that is packed with Speed Skating races.  She is the person on the RIGHT in this photo.
When Maria is in town, she frequents Real Foods Market in Heber and in Orem because she is dedicated to the idea of fueling her body with the most NUTRIENT-RICH, CLEAN FOOD she can consume.  Take a look at the meal plans she has suggested for athletes.  Then give it a try…it just might improve your game.

Nutrition for Athletes by Maria Lamb

Pre-work out and pre-race breakfast:
Ideally you want something that is high in carbs and easy to digest, with a little easy to digest fat and protein. Something that you like, that your body if familiar with, and that you eat regularly. Probably the worst thing you can do is prepare some sort of “special” breakfast that you are not use to eat for yourself the morning of a race.
I love oatmeal, and loving having it every morning, so I do! When I am home I have a bowl of oatmeal with some fruit and a little coconut milk, and a banana smoothie with some hemp and chia seeds.
When I’m on the road, I bring along my own oatmeal, mix in some chia and hemp seeds, and have a banana and fruit (usually dates).
Ideally this should be eaten 2-3 hours before training hard, and for racing, try to make sure you are eating at least 3 hours before the start of your race.
During and right before and after racing/hard training:
For high intensity activity such as a race, hard intervals, weight training, or any kind of hard or maximal effort, the only kind of food that your body will actually be able to digest quickly enough to use as fuel is sugar of one kind or another.
Dates, honey, agave nectar, brown rice syrup, coconut water or sugar are all more natural, healthy options. Powerade, Gatorade, energy gels, etc. are all just some version of sugar, usually with some other nasty additives and lots of packaging.
I really like dates, I find that they are really easy to pack and bring to the oval for training every day and for taking with me on the road. They are my tried and true hard training, pre-race, post race quick energy food (and Real Foods dates are my absolute favorite). I also really like them dipped in a little coconut oil. Coconut Oil is unique in that it is digested by your body very differently from other fats, and is very easily converted into energy, so it is the one fat that makes sense to eat in this type of situation.
If you are going to be sweating a lot for a prolonged period of time, make sure you are replacing electrolytes, a little Real Salt or a Re-lyte tab works well for this. (FYI-Re-lyte is made by Redmond Real Salt especially for athletes).
If you are doing a longer, more extensive sort of training, such as a long bike ride, longer easier run, etc., than this is a bit different. You still want mostly carbs, but some slower burning carbs, such as fruits, whole or sprouted grains, rice, etc. as well as a little bit of protein and fat. So, anything from a banana, to a pb & j sandwich, some honey on bread or with crackers, bars, dates, etc. I am sponsored by Gorilla bars, (which are made from raw honey, seven whole grains, brown rice, peanut butter and cranberries) so I eat these a lot. I also love bananas and my own homemade banana bread.
Dinner the night before:
Make sure you have a good dinner the night before a race. This is probably the most important pre-race meal, so make sure it’s good!
A good source of slow burning carbs (sprouted brown rice is my favorite option) combined with some vegetables, a quality source of protein and a little quality fat (such as nuts, seeds oils, etc.)
You want to ensure that your muscles glycogen stores full and your body is able to rest and repair itself well before a hard effort the next day. Also, if you have eaten a good dinner, you don’t have to worry so much about eating a lot for breakfast the next day if you are nervous or don’t do well eating a lot before a race.

Gallo Pinto – Costa Rican Rice and Beans

There is story first and then the recipe…
I can’t wait to share this recipe with you from Costa Rica. Several people from the Redmond Inc. company are currently in Costa Rica on a humanitarian trip I am lucky enough to be one of them representing Real Foods Market.
Rice and beans are on the menu THREE times a day in Costa Rica. No kidding. In the morning you will usually see Gallo Pinto (the recipe below), here the rice and beans are served mixed together, at lunch the rice and beans are served side by side along with meat and a salad and dinner is basically a repeat dish that looks like the lunch plate. Personally, I find that I really enjoy the rice and beans!
Here is a recipe of Gallo Pinto the rice and bean dish that is traditionally served in the morning as part of the breakfast meal. You will also see scrambled eggs, farm cheese and corn tortillas on the breakfast plate. It is a hearty meal, no doubt. It will keep you fueled for several hours at a level of high exertion – exactly the reason the Costa Rican people choose to start the day this way. Contrast that with a typical S.A.D. breakfast of coffee and doughnuts or orange juice and a bagel neither of which will FUEL the body very long…not much nutrient power there.
This recipe was given to me in a fantastic recipe book given to me from my dear friend Eugenia. She works in the Rotary de Belan in San Jose Costa Rica and she has been a tremendous blessing in the coordination of finding proper recipients for all the wheelchairs we purchased through our fundraising efforts. The Costa Ricans serve rice and beans for breakfast, lunch and dinner. If you ask me, you can serve this dish for any meal and you will LOVE it. All the best – Leslie

Gallo Pinto
½ red onion, finely chopped
½ red bell pepper, diced
1 handful cilantro, chopped
1 medium tomato, cut into cubes
freshly ground black pepper
Real Salt
1 T. butter
1 T. olive oil
2 cups cooked kidney beans
3 cups cooked rice (leftover rice is perfect)
1-2 T. Lizano (the secret sauce in Costa Rican food – google to see where you can buy it in your town).
Melt butter and oil in a large skillet and sauté the onion, pepper and tomato. Add salt and pepper to taste. Stir-fry the beans, adding the cooked rice little by little. If the mixture looks too dry add a little water. Add the Lizano if you are using it. Simmer to let the flavors blend. Stir in fresh cilantro before serving. Serves 4
